Scotch Toffee Bars

Our local library had a pretty fun book called Potluck Paradise on their new non-fiction shelf.  I brought it home mostly just to thumb through but I ended up finding a favorite childhood recipe. I had forgotten all about these but they are really good. Once I looked at the recipe and realized I had everything to make them I began at once!

2 cups quick or old fashioned oats
1/2 cup firmly packed brown sugar
1/4 cup dark corn syrup
1/2 teaspoon salt
1 1/2 teaspoon vanilla
1 cup semi sweet chocolate pieces (chips)
Pour butter over oats, mix thoroughly. Add sugar, syrup, salt and
vanilla, blending well. Pack firmly into a greased 7 x 11” pan.
Bake in very hot preheated oven (450) about 12 minutes.

Cool for about 5 minutes then spread with chocolate chips. Let them melt a bit then spread them around.
