Sweet Sixteen Apple, Rainbow Corn and Pepitas

Sweet Sixteen apple purchased at The University of Minnesota apple stand. The flavor is interesting and unique— sweet, yet with a tiny amount of “bite” and a hint of spice. Or, as others have described it, like a cherry popsicle.

I finally found a recipe that works for Pepitas. My mom used to say to soak’em before baking, but this recipe says to dry them before baking. The drying helps to make them “not so chewy”.
