Today is Day 6 on my “eat much healthier” quest. I have been doing very well but today I started to feel like something was missing. I tried to pinpoint what it was I was craving exactly. It wasn’t chocolate or chips, my old go-to comfort foods. Finally I realized what I really wanted was some type of appetizer. I had mushrooms and whole wheat bread on hand, parmesan, olive oil and garlic. I made these in 20 minutes and they really filled me up and got my mind off needing an unhealthy snack!
I had a handful of organic mushrooms on hand and I pulled the stems out and saved them for a salad I would make later. Next I mixed the following ingredients:
2 tablespoons of parmesan cheese
1/2 slice of whole wheat bread, crumbled into tiny pieces
1 clove chopped garlic
1 teaspoon olive oil
basil, salt and pepper sprinkles
I put a few drops of olive oil in a glass dish and set the mushrooms in it. I stuffed them with a small teaspoon and baked them at 400 degrees for about 10 minutes. Juicy and delicious!
