I haven’t been this excited about a cookbook in a long time. I found this during our city-wide garage sale last weekend for 25 cents! I picked it up thinking I would use it to learn how to make my husband some of this Scandinavian fair he is used to but when I started reading the book I fell in love with the recipes. I have several recipes bookmarked and plan to spend my winter learning how to bake like a Scandinavian. A lot of people who live around here can do it but I am an outsider in Minnesota and have little knowledge of the culture. Reading this cookbook will help.
The book comes from the University of Minnesota Press and is written by Beatrice Ojakangas. I LOVE her writing style and the structure of the book. So easy to read, good background information and down to earth. The Great Scandinavian Baking Book
is filled with wonderful recipes that I can hardly wait to try since a lot of the recipes include my favorite ingredients- almonds, coffee, fennel, etc.
First on my list is the Swedish Limpa. It is made with rye, orange zest, fennel, molasses and more and smells wonderful already. I can hardly wait to bake it here in a few hours. Check back tomorrow for my review!
